Hoppy Hot Cross Buns

Its finally Easter!

Which means one thing, and one thing only…. HOT CROSS BUNS
That warming spiced smell will make any mouth drool this time of the year.

But all too often it seems that mass produced hot cross buns have a list of ingrediants as long as a kids christmas list, which can make you second guess what actually is in these little buns

So why not whip up a batch, home made and filled with goodness for yourself or the family this easter season ?

No tricky ingrediants and a super simple process that will have your house smelling like cinnamon, spice and everything nice!

Makes 10 Buns

What You Need
2 Cups Wholemeal Flour
1 Cup Flaxseed Flour
1 Cup Dried Fruit of choice
1 Cup Almond Mylk
2 Tb Maple Syrup
40 g Grass Fed Organic Butter
3 tsp Yeast
2 tsp Cinnamon
2 tsp All Spice

X Marks the Spot:
1/4 cup White Flour
2 Tb Water
A drop of Vanilla

Glaze
Egg, whisked
OR
Coconut Oil

What You Do
In a large bowl combine the flours, dried fruit, yeast and spices
In a small sauce pan, combine and melt the butter, mylk and maple syrup. Stir and take off the heat to allow the mixture to cool.
Lightly dust a board with flour
Pour your butter mixture into the bowl and stir until a dough forms
Turn out onto your board and knead the dough for 5 to 10minutes
Place back into the large bowl, cover loosely with a tea towl or glad wrap and leave in a warm place to rise.
– leave for roughly 40 minutes or until the dough doubles in size

Once dough is ready, preheat the oven to 180c
Place dough back out onto your board and knead out another 2 – 3 minutes
Cut into small portions and roll into small rounded balls
Place balls on a lined baking tray, arranged closely together
Glaze over your choice of egg or cocout oil with a pastry brush evenly
To make your X mixture, combine the flour, water and vanilla in a bowl and stir until a thick consistency is acheived
Pop in a glad lock bag and squeeze the mixture down to one corner
Carefully cut a small part of the corner off and you have your self a piping bag!
Gently pipe your design of X over all of the buns
Place in over for 25 – 30 minutes, or until golden brown and cooked through

Take out your tray and transfer buns to a cooling rack
Spread with cinnamon, butter or nut butter and enjoy!
