Chunky Choc Chip Cookies

Who doesn’t love the comfort food that is the classic and chunky choc chip cookie?
How about if I told you that you could indulge in these treats completely guilt free and vegan friendly?
Well hold onto your socks because I can tell you that’s exactly what I have done!

The Essence of G Kitchen got a work out this morning and one of the concoctions that hit a high note was this little recipe!

What You Need.
1 1/2 cups Wholemeal Flour
1 tsp Baking Powder
1 1/2 cups Coconut Sugar
1/2 tsp sea salt
1/4 dark chocolate drops OR 3 -4 pieces of dark chocolate squares roughly broken up
60 grams Vegetable Shortening
2 tsp Vanilla Essnce\Extract
1 cup Almond Milk

What You Do.

Preheat oven to 180 & line a baking tray with paper.
In a medium sized bowl combine the flour, baking powder, coconut sugar and sea salt.
Place vegetable shortening in a heat proof bowl and microwave until melted.
Whilst stirring through, pour in vegetable shortening.
Slowly add in your almond milk. Keep in mind we want to have a dough like mixture that we can form, so be sure to not overload the bowl too quickly.
Lastly add in your dark chocolate!
Once your cookie mixture has formed a slightly sticky dough, spoon out into portions, roll into a ball and press down on the tray with the back of a spoon. Ensure each raw cookies are spread out evenly for baking.
Place in oven for 25minutes or until golden brown.
Check the middle of the thickest cookie with a skewer to ensure they have been cooked through!

If you are a rebellious wild child like me, eat them as soon as you can ! The melted chocolate is always bliss.
