Lemon Bliss Squares

With an added hit of protien of course!

These little bad boy squares are delicious, so much so I had to resist myself from chowing down on one whilst taking the above shot!

I’m always looking out for wholesome snacks that keep you going and I reckon this recipe is a gem!

Makes 8 squares 

What You Need. 

Crust. 

10 chopped Dates

1 cup LSA meal

1/2 cup Coconut oil (melted)

1 cup Walnuts

Generous squeeze of pure Maple Syrup 

Lemon Layer. 

2 1/2 cups Cashews

1 1/2 scoops Vanilla Protien

1 tsp Maca Powder

2 cups Lemon Juice (fresh or bottled)

2 tsp Vanilla Extract
What You Do. 

Lin a rectangle cake tin of medium size with baking paper and set aside. 

Place all crust ingredients into a food processor and blend in high. Once well combined, scoop out mixture and flatten down firmly to cover the base of the tin. Set in freezer. 

For our lemon filling we use the same process as we did for the crust ! So place all lemon layer ingredients into a food processor and blend on high. Be sure to stop, wipe down the sides with a spatula and blend again, do this a few times to ensure a smooth creamy consistency. Once the mixture is ready, scoop out and smooth over your crust base. Set in the freezer for 45 to ensure the slice has set, before removing and cutting up!

I’ve topped mine with a little mixture of coconut, lemon juice and turmeric !
